Orange Macaron with Cream Cheese Filling
Ingredients:
- 1 1/2 cups almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- Zest of 2 oranges
- Orange food coloring optional
- 8 oz cream cheese
- 1/2 cup unsalted butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- Orange extract optional
- Orange zest for garnish optional
Instructions:
Prepare a baking sheet with parchment paper and set aside
In a food processor, combine almond flour and powdered sugar
Pulse until well combined
Sift the mixture into a large bowl and set aside
In a separate bowl, beat the egg whites until foamy
Gradually add granulated sugar while continuing to beat
Beat until stiff peaks form
Fold the beaten egg whites into the almond flour mixture
Add orange zest and a few drops of orange food coloring if desired and gently fold until the batter is smooth and shiny
Transfer the batter to a piping bag with a round tip
Pipe small circles onto the prepared baking sheet, spacing them apart
Let them sit at room temperature for about 30 minutes to form a skin
Preheat your oven to 325F 160C
Bake the macarons in the preheated oven for 12-15 minutes, or until they have a slight crust and have risen
Let them cool on the baking sheet before carefully removing them
While the macarons are cooling, prepare the cream cheese filling
In a mixing bowl, beat together cream cheese and butter until creamy
Add powdered sugar, vanilla extract, and a few drops of orange extract if desired
Mix until smooth and well combined
Once the macarons are completely cooled, pipe the cream cheese filling onto the flat side of one macaron shell and sandwich it with another shell
Repeat with the remaining macarons
Optional: Garnish the macarons with orange zest for extra flavor and presentation
Refrigerate the macarons for at least 2 hours before serving to allow the flavors to meld together
