Warm Chickpea and Lamb Hummus
Ingredients:
- 2 cups cooked chickpeas
- 1/4 cup tahini
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup chopped lamb
- 1/2 teaspoon ground coriander
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 cup diced tomatoes
- 2 tablespoons chopped fresh parsley
- Warm pita bread for serving
Instructions:
In a food processor, combine the cooked chickpeas, tahini, minced garlic, lemon juice, olive oil, ground cumin, salt, and pepper
Blend until smooth and creamy
If the mixture is too thick, you can add a bit of water to achieve your desired consistency
In a separate pan, heat a tablespoon of olive oil over medium heat
Add the chopped lamb and cook until browned and crispy, breaking it into smaller pieces with a spatula as it cooks
Add ground coriander, paprika, and cayenne pepper to the lamb
Stir well and cook for another minute until the spices are fragrant
Remove the lamb from the heat and stir in the diced tomatoes and chopped fresh parsley
To serve, spread the creamy hummus on a plate or shallow bowl
Top it with the warm lamb and chickpea mixture
Serve with warm pita bread for dipping and enjoy your warm chickpea and lamb hummus!
