Beef with Avocado Chimichurri Sauce
This recipe calls for grilled beef that is juicy and a creamy and flavorful chimichurri sauce made from avocados. There is a new twist to the traditional chimichurri sauce that comes from the creamy avocado. This makes it perfect for topping your grilled steak.
Ingredients:
- 1 lb beef sirloin steak
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 ripe avocado, peeled and pitted
- 1 cup fresh cilantro leaves
- 1/4 cup fresh parsley leaves
- 2 cloves garlic
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
Warm the grill up to a medium-high level
Spread olive oil over the steak and season it with salt and pepper on both sides
For medium-rare steak, grill for 4 to 5 minutes per side, or until done to your liking
Put the chimichurri sauce together in a food processor with the garlic, red wine vinegar, olive oil, lime juice, salt, and pepper
Do this while the steak is cooking
Mix until it's smooth
Take the steak off the grill and let it rest for a few minutes after it's done the way you like it
Cut the steak across the grain and serve it with a lot of avocado chimichurri sauce on top
