Chocolate Covered Frozen Raspberries
Ingredients:
- 2 cups fresh raspberries
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- 1/4 cup crushed almonds optional
Instructions:
Thoroughly wash and pat dry the raspberries
Use parchment paper to line a baking sheet
Melt the coconut oil and dark chocolate chips in 30-second increments in a microwave-safe bowl, stirring in between, until smooth
Using a fork, dip each raspberry into the melted chocolate, letting the excess drip off, and then arrange on the baking sheet that has been preheated
Garnish with chopped almonds, if you'd like, over each raspberry coated in chocolate
To ensure the chocolate sets, place the baking sheet in the freezer for a minimum of half an hour
When they're ready to serve, move the chocolate-covered raspberries from the freezer to an airtight container and store it there
