Peppermint Crunch Brownie Cookies



These Peppermint Crunch Brownie Cookies are the perfect treat for Christmas Cookie Exchanges. They combine the rich flavors of brownies with the refreshing taste of peppermint, making them a delightful holiday treat.

Ingredients:

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup crushed peppermint candies
  • 1/2 cup crushed candy canes for topping

Instructions:

Preheat your oven to 350F 175C

Line baking sheets with parchment paper

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy

Add the eggs one at a time, beating well after each addition

Stir in the vanilla extract

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the semi-sweet chocolate chips and crushed peppermint candies

Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets

Bake for 10-12 minutes or until the edges are set and the centers are slightly soft

Remove the cookies from the oven and immediately sprinkle crushed candy canes on top of each cookie

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely
